Ingredients:
8 ounces of manchego cheese
4 ounces of panko bread crumbs
1 beaten egg
1/2 cup of flour
paprika to taste
enough high quality olive oil to coat the bottom of your pan

1.Cut the manchego into little triangles.
2.Heat oil in skillet - medium high should work.
3.Dip the triangles into the egg, dip in flour mixture (flour mixed with paprika), cover with bread crumbs.
4.Place the triangles in oil. After 2-3 minutes, turn the triangles over.
5.It’s finished when the triangles are golden brown.

I find manchego frito to be best on some warm crusty bread, but it would also work with warm pita or just by itself.
